Restaurant Manager – Fine Dining

About the role

Satāya is representing an established fine‑dining restaurant in Malta, known for contemporary Latin American and Mediterranean cuisine. The role requires a confident floor leader who can ensure the guest experience feels effortless while maintaining the precision behind the scenes.

Key responsibilities

• Lead day‑to‑day front‑of‑house operations, maintaining high standards across every service and overseeing the guest journey from arrival to departure.
• Coordinate closely with culinary and beverage teams to ensure seamless communication, service flow, reservations, and table management.
• Handle VIP guests, special requests and guest recovery with discretion and warmth.
• Coach, develop and schedule the front‑of‑house team, conducting daily briefings and ensuring strong product knowledge.
• Monitor labour, stock, wastage and overall restaurant costs, contributing to initiatives that boost revenue and profitability.
• Ensure compliance with health, safety, hygiene and other regulatory standards.

Required profile

• Proven experience as a Restaurant Manager, Assistant Manager or senior front‑of‑house leader in fine‑dining, Michelin‑recognised or five‑star luxury hospitality.
• Strong understanding of formal and contemporary fine‑dining service with excellent guest presence.
• Demonstrated ability to lead, train and develop high‑performing front‑of‑house teams.
• Extensive food and wine knowledge and commercial awareness of restaurant costs and performance.
• Calm, composed under pressure with exceptional attention to detail.
• Fluent English; additional European languages advantageous.
• Right to work in Malta or the EU.
