Director of Food and Beverage

About the role

Satāya is representing an internationally recognised lifestyle hotel brand in the appointment of a Food and Beverage Director for its newly opened Mediterranean property. The hotel is now operating and the focus has shifted to strong leadership of its multi‑outlet food and beverage portfolio. The successful candidate will combine luxury hotel expertise with experience in high‑energy independent restaurants to shape distinctive venues that attract both locals and guests.

Key responsibilities

• Take ownership of every food and beverage outlet, defining unique identities, concepts and standards for each venue.
• Manage the F&B P&L, budgets and forecasts, monitoring covers, average spend, cost of sales, labour and profitability, and drive revenue growth through partnerships and events.
• Lead events and banqueting operations, develop a premium wine and beverage programme, and train bar and sommelier talent.
• Set and maintain exceptional service standards, be visible on the floor, monitor guest feedback and audits, and ensure compliance with food safety, health and safety, licensing and brand standards.

Required profile

• Senior food and beverage leadership experience in luxury or lifestyle hotels, ideally at Director level.
• Proven track record with independent, high‑profile restaurant or bar concepts and multi‑outlet operations.
• Strong financial literacy with ability to present P&L performance, cost structures and business cases.
• Experience delivering large‑scale events and banqueting, with pre‑opening or early‑opening exposure.
• Creative, concept‑driven mindset balanced by operational rigour and charismatic floor‑level leadership.
• Fluent English; additional European languages advantageous; EU passport or right to work in Malta and willingness to relocate.
