About the role

The Pastry Chef De Partie oversees the daily operation of the pastry galley on a cruise ship, ensuring high‑quality production, presentation, and compliance with United States Public Health regulations. Working closely with the Assistant Pastry Chef, the role combines culinary expertise with strong team leadership.

Key responsibilities

• Manage smooth and efficient operation of the pastry galley and daily production according to company policies.
• Direct, coach, supervise and evaluate pastry team members together with the Assistant Pastry Chef.
• Ensure quality, presentation and consistency of all pastry and dessert items served in daily menus.
• Prepare production forecasts, record leftovers and control food costs within budget.
• Supervise set‑up of pastry and dessert displays across various buffets.
• Maintain compliance with United States Public Health rules and shipboard inspection requirements.
• Oversee cleaning schedules, equipment care and readiness for USPH inspections.
• Handle requisition and transport of supplies from main stores to the pastry galley.
• Monitor attendance, uniform standards and punctuality of pastry staff.
• Account for daily production recap and coach pastry cooks.

Required profile

• Minimum two years’ experience as a Pastry Chef De Partie in an upscale hotel, resort, cruise ship or convention banqueting service.
• Strong management abilities in a multicultural, dynamic environment.
• Excellent communication, problem‑solving and decision‑making skills.
• Superior customer service, team‑building and conflict‑resolution capabilities.
• Knowledge of personalized service principles and guest satisfaction techniques.
• Proficiency in planning, coaching, organizing, staffing and evaluating staff.

Required skills

• Intermediate computer software proficiency.
• Understanding of basic accounting principles such as debits/credits and adjusting entries.
• Ability to write reports and business correspondence.
