Baker – Onboard Bakery Production

About the role

The Baker assists the Head Baker in supervising and managing the onboard bakery production on Explora Journeys vessels. This role ensures that all bakery items meet the company’s quality standards, safety regulations, and guest expectations.

Key responsibilities

• Prepare and produce a variety of bakery goods such as breads, rolls, Danish pastries, croissants, and specialty decorations.
• Maintain quality, taste, presentation, and consistency according to recipes and visual standards.
• Train, guide and supervise bakery personnel to increase productivity and ensure compliance with food safety procedures.
• Control inventory, prepare daily electronic requisitions based on guest counts, and minimize waste.
• Ensure all bakery equipment is cleaned, sanitized, and maintained, reporting any damages or malfunctions.
• Conduct spot‑checks, inspections and corrective actions to meet public health regulations (US, Anvisa, Shipsan, etc.).

Required profile

• Minimum 8 years of bakery experience in luxury hospitality or upscale cruise line.
• Advanced bakery skills with a bakery school degree and food‑hygiene certification.
• Strong leadership, decision‑making and coaching abilities.
• Good administrative skills and cost‑quality awareness.
• Fluent written and spoken English.
• Basic knowledge of food safety and HACCP principles.
