Assistant Cook – Cruise Ship

About the role

The Assistant Cook supports the galley team on board Explora Journeys vessels, preparing the groundwork for daily menu items under the guidance of the section leader or manager. The role involves following established recipes, maintaining food safety standards, and ensuring timely delivery of dishes across all kitchen sections.

Key responsibilities

• Prepare basic food items and assist in all galley sections as required.
• Follow company recipes, maintain flavor balance, and apply advanced knife‑handling techniques.
• Ensure compliance with public health regulations and HACCP food safety procedures.
• Maintain inspection readiness for ship management and local authorities.
• Control costs through proper use and handling of supplies and equipment.
• Adhere to safety and security protocols within the galley.
• Provide early stand‑by support for USPH purposes and assist the procurement team with storage and quality control.

Required profile

• Minimum three years of kitchen operations experience.
• Basic food safety knowledge and a Food Hygiene certification.
• High school diploma or equivalent and a culinary school degree.
• Ability to communicate effectively in English and use basic administrative tools.
• Flexibility to work scheduled hours and adapt to changing circumstances.

Required skills

• Advanced knife‑handling skills.
• Knowledge of food safety/HACCP standards.
• Proficiency with Microsoft Outlook, Word, Excel and PowerPoint.
• Understanding of culinary terminology and recipe execution.
