Outlet Manager – Fine Dining Restaurant

About the role

We are looking for an experienced Outlet Manager to lead the front‑of‑house operation of our Michelin‑starred restaurant UnderGrain. The successful candidate will ensure exceptional service standards, smooth daily operations, and a memorable, personalised dining experience for every guest.

Key responsibilities

• Oversee daily restaurant operations, including opening, closing and service coordination.
• Manage stock control, ordering, acceptance, rotation and returns.
• Prepare efficient staff rotas and timesheets.
• Support the operation in the absence of the F&B Service Manager.
• Ensure mise‑en‑place, presentation and service standards meet Michelin‑level expectations.
• Lead, train and motivate the team to uphold grooming, behavior and service excellence.
• Encourage upselling and support revenue‑driven initiatives.
• Handle cash float, billing procedures and financial accuracy.
• Log and report security incidents and accidents promptly.
• Maintain strong cooperation with management and team members.

Required profile

• Previous experience as a restaurant manager or assistant manager in a fine‑dining environment.
• Strong wine knowledge; WSET certification preferred.
• Excellent English language skills.
• Strong understanding of fine‑dining service standards, sequence of service and guest engagement.
• Ability to lead, train and motivate the team.
• Excellent food, wine and beverage knowledge, including confident explanation of menus, pairings and dietary requirements.
• Strong guest‑relations skills, including complaint handling and service recovery.
• Experience managing daily operations, briefings and service coordination.
• Understanding of restaurant financials and KPIs, including revenue, average spend, beverage cost, labour cost and upselling.
• Experience with Opera and reservation systems, ideally including guest profiling and table management.
